Mousse De Tequila

Mousse was introduced to Mexican Cuisine by Empress Carlotta, and was very popular with the numerous French immigrants of the nineteenth century; some creative cook introduced Tequila to Carlotta’s mousse.

Instructions

In a medium bowl mix together the gelatin, ¼ cup sugar and salt.

In a large bowl, beat the egg yolks until thick, add the lime juice, water and mix well.

Pour this mixture over the gelatin, place over medium heat, and stir until dissolved,

Remove from heat,add the Tequila,Triple Sec,and grated lime peel, mix well

In a large bowl beat the egg whites until stiff; slowly add the other ¼ cup of sugar,

Just before the Tequila mixture begins to set, fold in the egg whites.

Ingredients

 1Teaspoon plain gelatin 

¼ cup sugar

Pinch of salt

2 eggs Separated 

2 tablespoons lime juice

1 tablespoon water

¼ cup Tequila

¼ cup triple sec                                                         

¼ cup sugar

Grated lime peel
